Organic green zucchini, grown in the Altiplano of Granada with regenerative agriculture practices by Anita La Cortijera and Miguel.
This vegetable stands out for its elongated shape and dark green color. Their mild flavor and firm texture make them a very versatile ingredient for a multitude of dishes, such as sautéed dishes, creams, stuffings…
Zucchini is one of the vegetables with the lowest caloric content because it is 96.5% water. It also contains minerals (potassium and calcium) and vitamins (A and C).
It can be consumed all year round, although its ideal season is summer, after the harvest in August.
Anita and Miguel’s zucchini cultivation is based on regenerative agriculture. They use natural organic fertilizer from Anita’s goats and use rainwater retention practices, in addition to irrigation, to conserve moisture and increase fertility.
