Description
Green beans of a traditional and very common variety in the Altiplano area of Granada, the Xera bean has an elongated and flat pod, slightly curved. Also called habillas.
This species of legume contains a type of fiber that helps lower cholesterol and control sugar levels by regulating the speed at which they pass into the blood. It also has very few calories because 90% of its composition is water.
The ideal season to consume green beans is from May to October, although well preserved in cold or frozen they can be enjoyed all year round.
Mari Cruz and Joaquín grow green beans with regenerative agriculture. This means that they are concerned not only with the sustainable cultivation of high quality organic products, but also with the care of the countryside. For example, they protect the vegetation cover of the soil, which they fertilise with dried organic manure. They also allow indigenous grazing and manage irrigation with water that comes down from the Sierra de Baza through natural irrigation channels.
