Description

Semi-cured and cured goat’s milk cheeses, made by hand by Mari Carmen in her Baza cheese factory.

The milk comes from goats raised in the Sierra de Baza, on local farms that guarantee their animal welfare.

They are cheeses made from 100% goat’s milk transformed through a slow pasteurization process. The milk is first stored at 4Cº, it is pasteurized at 65ºC for 30 min; When the milk is at 32ºC, acidifying ferments are added and it is left to mature for 1 hour. After this, the grain is worked in the vat for 30-40 min, raising the temperature to 4-5Cº to favor the draining of the grain, which is processed on the draining table, separating the curd and filling the perforated molds provided in a cloth. After filling the molds, they are pressed and turned several times to promote maturation.

How will they get there?
You can choose between:

  • 3kg box, containing 2 x 0.5kg cuts of mature cheese, 1 x 0.5kg piece of semi-cured cheese, 2 x 0.5kg mature cheeses and 1 x 0.5kg semi-cured cheese.
  • 1,5kg box, containing two 0,5kg cured cheeses and one 0,5kg semi-cured cheese.

  • The cheeses must always remain refrigerated, it is better that they are not hermetically sealed but covered by paraffin or waxed paper, and that their rind “breathes”
  • It is advisable to turn the cheese approximately every 8 or 10 days. Whole pieces of cheese are better preserved than if they are chopped, since their rind protects them, let’s not forget that it is their “natural protection”
  • Semi-cured cheeses have a shelf life of 12 months and cured, old and aged cheeses have a shelf life of 24 months
