Daniel spent his childhood summers watching the organic almond trees grow on a small farm in Freila, a village in the Altiplano of Granada. The same almond trees that he now runs as a farmer, taking over from his father.
Why the almond? Because its regenerative cultivation, as Dani himself says, in this pre-sierra area is “very grateful”. By caring for the trees with regular pruning (which incorporates the canopy) and looking after the soil with organic fertiliser and minimally invasive tillage, an exquisite organic almond is achieved.
There are many stages in the almond growing cycle, from blossoming in March (for which it hosts regenerative beekeeping hives) to harvesting at the end of the summer. And in all of them Dani is present to supervise that the fruit is of the highest quality and respects the guidelines of regenerative agriculture.
